Lucas Cabarite

General Manager

Lucas fell in love with restaurants after spending a summer working as a prep cook in his hometown. The noise, the smell, and the controlled chaos seemed to be so right. After finishing Culinary School and working in renowned restaurants in São Paulo, Lucas moved to Sydney. While living in Australia Lucas made a life changing decision, switching from kitchen to the Front of the House in 2017. He worked in upscale restaurants until, finally he moved to Vancouver in 2021. Thanks to professional connections, Lucas met AJ, and the opening plans for Otter Trail began. 

Lucas is a graduated Professional Sommelier from the Brazilian Sommelier Association (ABS-SP) and loves to share his passion for what he refers to as “Meaningful Hospitality”.

David Carrier

Head Chef

David’s lifelong passion for food began early, devouring solid foods eagerly and embracing culinary exploration. Family dinners offered a diverse array of homemade dishes, fostering his appreciation for culinary adventures. At 12, he started as a dishwasher at an oyster bar, igniting his understanding of the industry. Now, after two decades of travel and work, David presents a menu inspired by his experiences, showcasing his creativity and favorite flavors. Each item is a must-try experience.

Stéfanie Dylla’s

Head Winemaker

Stéfanie Dylla’s winemaking journey began with a degree in Viticulture and Oenology from Brock University. From New Zealand to Laughing Stock Winery to Desert Hills Winery, she rose through the ranks, showcasing her talent and dedication. Now, as Head Winemaker at Domaine Artema, she crafts exceptional Gamay Noir and Chardonnay, embodying her passion and expertise.
