His career spans restaurants, pubs, and entertainment-driven venues throughout the Lower Mainland, where he’s built a reputation for strong leadership, team development, and a hands-on, people-first approach.

Shayne was a co-owner of Vancouver’s Rossini’s restaurants, helping create a vibrant dining destination known for its Italian cuisine, curated wine offerings, and live jazz and blues. This experience shaped his focus on energy, consistency, and community.

At Otter Trail Winery, Shayne is focused on evolving the guest experience into an inviting, upscale-casual setting that blends exceptional food, BC wines and spirits, with a warm, welcoming atmosphere. His goal is to create a space that feels both polished and approachable.

Known for leading shoulder-to-shoulder with his team, Shayne believes strong culture is the foundation of great service. By fostering a positive, respectful environment, he ensures every guest experience feels genuine and memorable.

For Shayne, hospitality goes beyond what’s on the table—it’s about how people feel. His goal is simple: create an experience guests want to return to, time and time again.

Alyssa joined the Otter Trail team in Spring 2026 as Manager of Marketing and Events. With over eight years of experience in the hospitality industry and event management, combined with a love for all things wine, stepping into a role where she can create seamless, personalized experiences felt like a natural fit.

Alyssa has spent the past four years executing events in Vancouver, BC, where she has had the opportunity to work on a range of events, from large-scale corporate functions to brand launches, weddings, and everything in between. Known for her keen eye for detail, Alyssa is dedicated to creating a seamless, personalized experience that feels thoughtful and welcoming. Equal parts organized and creative, she excels at transforming ideas into experiences that are both memorable and meaningful. Whether curating a winery wedding, developing marketing initiatives, or enhancing the guest experience, Alyssa ensures every element is intentional and thoughtfully considered

Stéfanie Dylla’s winemaking journey began with a degree in Viticulture and Oenology from Brock University. From New Zealand to Laughing Stock Winery to Desert Hills Winery, she rose through the ranks, showcasing her talent and dedication. Now, as Head Winemaker at Domaine Artema, she crafts exceptional Gamay Noir and Chardonnay, embodying her passion and expertise.
